Is canned nutritious?


Can is the use of pasteurization, its sterilization temperature is generally about 120 °C, and vegetables, fruits sterilization temperature is lower, generally 80-90 °C. At this temperature, most of the nutrients in the can are well preserved, and only a few heat resistant vitamins, such as vitamin C, vitamin B6, and vitamin B9, are destroyed.

Canned food is not nearly as hot as stir-fried vegetables, and its nutritional content should be better preserved than food cooked in a conventional way. German scientists studied pasteurized and freshly cooked green beans and carrots, and found no difference in most of the nutrients.
